Sodium cocoate is produced by hydrolysis of the ester linkages in coconut oil with sodium hydroxide, a strong base. In chemistry, especially biochemistry, a fatty acid is a carboxylic acid with a long unbranched aliphatic tail, which is either saturated or unsaturated. Most naturally occurring fatty acids have a chain of four to 28 carbons. The number of carbon atoms is usually even, because their biosynthesis involves acetyl-CoA, a coenzyme carrying a two-carbon-atom group. Fatty acids are produced by the hydrolysis of the ester linkages in a fat or biological oil, with the removal of glycerol. See oleochemicals.
