It is primarily produced in the city of Qom. Sohan is produced in traditional workshops and not usually in homes. It is known as the Gift of Qom, Pilgrims and travelers to Qom purchase it and take it to their cities as a gift. Some types of Sohan known as Honey Sohan is also made in Isfahan. Sohan is brittle and brown in color. It is usually made as circular thin disks of 5-6mm thickness, or as square pieces. It is usually packaged in metal or, (for lower-quality sohan) plastic cans. Sohan is made from wheat sprout, saffron, flour, sugar, butter or vegetable oil, cardamom, yolk, rose water, pistachio and almond.
