It is a traditional Nicaraguan dish originated from the mix of cultures between the indigenous, mestizos and afro-Nicaraguans of the country. In Nicaragua and some other Spanish dialects "vajo" is pronounced as "bajo". There is some controversy as to whether the correct spelling is "vajo" or "bajo". Its also serve with a cabage and tomato salad made with vinegar and lemon juice. The salad top the meat the yuca and the plantains its tradition to make it on sundays only.
