It is popular in China, but it originated in Taiwan where chefs use it to show customers how fresh the food is. Cooking of this dish, which places the fish in extreme pain, is now prohibited in Taiwan. Animal rights activists have criticized the practice. On July 8, 2008 Taipei, Taiwan, Animal rights activists slammed a Taiwanese chef for serving a gourmet dish that included a deep fried fish with its head still twitching. The chef served the carp with its body deep-fried and covered with sweet and sour sauce. When the diners picked at the fresh meat with their chopsticks, they watched the fish mouth stir.
